Knowledge and monitoring of the metabolism, the physiological state of yeasts (and in particular Brettanomyces) and bacteria, for a real assessment of the risks of accidents, alteration or contamination during winemaking, and an objective validation of the effectiveness of the processes, treatments and usual practices in the cellars.
