Description
As part of the winemaking process for wines with no added sulfites, ageing is a stage that needs to be mastered in order to preserve the sensory qualities of the wines. Recent technical references have been acquired as part of the regional “Vins sans SO2” project, and these will be presented at the forum, along with feedback.
