Description
A wine “blanc de noir” is a white wine made with black grapes. The anthocyanins responsible for the red color are only present in the grape skins, while the juice from the pulp is actually white. In the champagne area, the Champagne producers create "white" base wines from black grape varieties such as Pinot Noir or Meunier.
Is this possible in Bordeaux with our deeply colored black grape varieties like Merlot or Cabernet Sauvignon? Yes, but it requires adapting our winemaking techniques.
