Description
The Efflu'Eau project has confirmed the bio-adhesive power of Brettanomyces yeasts in the laboratory and on site, whether isolated from wine or surfaces, with notable differences. Optimization of hygiene procedures at the sites concerned surface cleanability and water consumption. The use of conductimetry can significantly reduce the amount of water needed for rinsing.
