Early yeasting: a strategy for bioprotection of the harvest

Description
In view of growing consumer interest in products without chemical additives, limiting the use of sulfites is a priority for the wine industry. Bioprotection, with the early use of fermentation strains, is one of the solutions to avoid or reduce the risks of alteration that negatively impacts the organoleptic quality of wines. Examples of experimental vinifications carried out in Bordeaux and Cognac as part of the Casdar Bioprotect project will be presented to illustrate this practice.
