NOVOCLAIR SPEED

Description

fast clarification of musts with high turbidity and rich in pectin! NOVOCLAIR SPEED is a concentrated pectinase, free from cinnamoyl-esterase activity. Thanks to its specific polygalacturonase and pectinmethyl-esterase activities, NOVOCLAIR SPEED makes a quick surgical cut through the pectin chains. This results in quicker clarification and greater lees compaction in the musts of white and rosé wines. Due to its specific characteristics, NOVOCLAIR SPEED is able to work at low pH and temperatures (down to 5 °C). This product is allowed for a use in Organic and NOP according to the current regulations.
