Restore balance and freshness to your wines! Strain of Lachancea thermotolerans (non-Saccharomyces yeast). This yeast has a unique metabolism which enables it to transform fermentable sugars into lactic acid during the fermentation. This lactic acid production is directly linked to the following variations: - Increased total acidity - Lower pH - Small decrease in alcohol content Used in association with Saccharomyces cerevisiae, it restores balance and freshness to wines.
